All coffee grinds and raw fruit and vegetable trimmings are now being converted into compost via Winnow, a food waste solution technology. Powered by artificial intelligence, Winnow identifies and measures food waste - producing guidance to enable our chefs to make necessary changes in their production. The system also shows the value of waste visually in terms of money and environmental impacts. This is a huge motivator for our kitchen team who are working tirelessly to reduce food waste by 50% by 2025.
